How to make fondant horses

One of my old co-workers wanted me to make her daughter a unicorn or horse cupcake cake. After seeing me post photos on facebook of cupcakes I had made. I happily accepted. I am a fan of cupcakes so I have a few books on them. Those being, Just Cupcakes, Hello, Cupcake!, and What';s New, cupcake?
I took the idea for making horses from Hello, Cupcake. If you have that book, you can find it under party animals page 61. I made one of those for my old co-worker to show her in example of it. After doing that I decided to throw my own ideas into the mix. The heads made out of circus peanuts wouldn't stick to the neck which is a creme wafer. To make it stick you are suppose to use frosting. I tried this and the heads just kept falling off.
Thus, I decided why not use fondant? I recently learned how to make marshmallow fondant and I find it to be very amusing. If you don't want to make marshmallow fondant and have gooey fingers. I'm sure you can buy it at a grocery store or online.
The first thing you need to do. Is cut off some of the bottom of the circus peanut. Than with the creme wafer put frosting on one of the ends and stick the circus peanut (the top part, the bottom one can be left to feed to children or puppies) to that end. On the opposite end of the creme wafer cut diagonally across it. That will be the part you insert in your cupcake. Put your horse heads in the freezer. This will make them hold up better.
Roll out fondant, don't forget to grease up your surface and hands. Once you've rolled out the fondant. Place one horse head in the fondant and cover it. Cut off any extra fondant and form the fondant to the horse head. Place on a cookie sheet with wax paper to set. Repeat this step until desired horse heads are covered. Leave them in the freezer until they harden.
Whatever frosting color you would like to use, you can. Make sure that the frosting you use, however, is stiff. Make two eyes on the side of the circus peanut, two holes for the nose, and two ears for the top. I used a light brown for this, and a dark brown for hair. To make hair I over layered the frosting going side to side.
